I love to cook with butternut squash. It is such a versatile vegetable. It has a smooth nutty flavor and looks so bright and inviting. I use it for salads or as an entree.
To prepare simply wash the outside of the squash. If dicing is required, peel the outside with a potato peeler, cut in half and scoop out the seeds with a spoon or a grapefruit spoon. If using the entire squash, clean the outside of the squash , cut in half and scoop out the seeds. Then, prepare it as directed.
